Less meat balls with wellness vegetable mix

Ingredients

For balls

  • 300 g Ardo Tricolour lentil mix
  • 250 g Ardo Sweet Life Mix
  • 50 g Ardo Shallots
  • 10 g Ardo Parsley
  • 800 g minced veggie
  • 100 g breadcrumbs
  • 2 eggs
  • Olive oil



For the sauce

  • 200 g Ardo Brunoise mix
  • 200 g Ardo Tricolour lentil mix
  • 100 g Ardo Shallots
  • 10 g Ardo Garlic diced
  • 10 g Ardo Provençal herb mix
  • 300 ml vegetable stock
  • 1 l tomato coulis
  • Olive oil



For the vegetables

  • 1.5 kg Ardo Wellness Mix
  • 50 g margarine or butter
  • Pepper, salt

Preparation

  1. Cook the Sweet Life Mix with the shallots in a dash of olive oil. Defrost the tricolour lentil mix.
  2. Mix the veggie mince with all the other ingredients, make the balls and cook them in the pan or oven.
  3. Cook the vegetables and aromatics for the sauce in a dash of olive oil, moistened with the vegetable stock and the coulis. Simmer until the vegetables are cooked. Add the lentils and season with salt and pepper. Add the meatballs to the sauce.
  4. Steam the wellness mix briefly in the steamer and then continue to cook in butter or margarine. Season with salt and pepper.
  5. Serve together.
