Ingredients
Ingredients for 4 loaves:
Dough:
- 50g yeast
- ½ l water
- 2 eggs
- 2 tbsp. sugar
- 1kg wheat flour
- 2 tsp. salt
- 100g soft butter
- 1 egg for brushing
Thai style Herb Butter for 2 loaves:
- 100g Ardo Thai style herb mix
- 50g soft butter
- 100g hazelnuts
- 8 tbsp. rapeseed oil
Provence Herb Butter for 2 loaves:
- 70g Ardo Provence herb mix
- 50g soft butter
- 8 tbsp. rapeseed oil
Garnish:
- 100g grated mozzarella
- 2 dl black or white sesame seeds

Preparation
- Crumble the yeast in a bowl and stir it into the water. Add the eggs, sugar, flour, and salt.
- Knead the dough on a mixer at low speed. Add the butter in small cubes little by little.
- Let the dough continue to knead for about 5 minutes until it is shiny and smooth.
- Shape the dough into a ball and let it rise for 40 minutes.
- Blend the hazelnuts and mix together the other ingredients for the herb butter.
- Divide the dough into 4 pieces - roll each piece into a rectangle of about 40 cm. Spread a thin layer of herb butter on each piece.
- Then roll the dough lengthwise into a tight roulade.
- Cut the roulade in half lengthwise so you can clearly see the lengthwise stripes from the herb butter. Twist them together with the herb butter facing upwards all the time.
- Place them on a baking sheet. Let them rise for 40 minutes.
- Heat the oven to 210°C.
- Brush the loaves with egg and bake for about 20 minutes until golden and crispy on top.
