Stuffed bell pepper with courgette and leek

Ingredients

  • 800 g Ardo Courgette cubes
  • 800 g Ardo Creamed leeks
  • 5 bell peppers
  • 50 g butter or margarine
  • 100 g parmesan cheese
  • salt and pepper

Preparation

  1. Steam the courgette cubes briefly and allow them to drain.
  2. Sauté the courgette cubes in the butter, season with salt.
  3. Add the creamed leek and allow it to heat through.
  4. Cut the peppers in half, remove the seeds and stuff them with the courgette mixture.
  5. Grate some Parmesan over the stuffed peppers and bake in the oven at 180°C for about 20 minutes.
