Halloween stew

Ingredients

  • 1.5 kg Ardo Butternut
  • 300 g Ardo onion cubes
  • 1.5 kg mashed potatoes
  • 100 g butter or margarine
  • 200 g speculoos
  • 100 ml Vegetable bouillon

Preparation

  1. Fry the onion in butter or margarine.
  2. Add the butternut and allow it to cook for a while.
  3. Now add the bouillon and simmer until the butternut is cooked through.
  4. Mix the butternut into the mashed potatoes and place in a baking dish.
  5. Sprinkle with the broken speculoos biscuits and bake in the oven for 20-30min at 180°C.
