Ingredients
- 1.5 kg Ardo Duo of courgettes
- 50 g Ardo Italian herb mix
- 200 g mascarpone
- 150 g red pesto
- 100 ml olive oil
- salt and pepper

Preparation
- Steam the courgettes briefly and allow them to drain.
- Mix the red pesto with the mascarpone and half of the Italian herb mix.
- Mix the rest of the Italian herb mix with the olive oil.
- Spread the mascapone mixture in a baking dish. Arrange the courgette slices on top.
- Season the courgette slices with salt and pepper and brush with the spicy oil.
- Bake in the oven for 20 minutes at 180°C.
