Butternut squash soup with Jonagold apples and smoked duck breast

Serves 4

400g yellow soup mix Ardo,
400g diced butternut squash Ardo,
100g apple slices Ardo,
10g chopped garlic Ardo,
5g parsley Ardo
1.5l chicken stock,
50g smoked duck breast,
100ml cream,
1 star anise

Preparazione

  1. Pour the chicken stock over the yellow soup mix, diced butternut squash, apple slices and chopped garlic and simmer until cooked. Blend to form a lovely yellow soup.
  2. Add star anise to taste.
  3. Garnish with parsley, a little cream and the chopped duck breast.
