Thai Cauli Power salad with roasted Edamame beans


Serves 4:

500g Ardo Cauli Power Mix
100g Ardo Edamame soy beans
50g Ardo Thai herb mix
20ml Fish sauce
40ml Coconut milk
20g Cane sugar
40ml Water
Juice of 2 limes
Pepper and seasalt
Cooking oil


Soy, Fish


Blend the Thai herb mix with the sugar and some salt in a small blender. Mix in the water, coconut milk and fish sauce. Allow to infuse on medium heat for about 5 minutes, do not boil. Cool down and finish with the lime juice. Season with pepper and salt.

Edamame soy beans:
Pan fry the Edamame beans and season with pepper and salt. Set aside to cool down.

Cauli Power Mix:
Heat the Cauli Power Mix in a microwaveable bowl for about 5 minutes. Allow to cool down and season with some pepper and salt. Add the pan roasted Edamame soy beans and stir in the fresh Thai dressing. Serve as side dish in a nice bowl, or as a base for your salad. Decorate with roasted coconut flakes and some coriander.
