Salmon Fillet in white wine and Romanesco mix

Ingredients for 4 persons:

500g Romanesco Mix Ardo
100g Diced tomatoes 10x10x10mm Ardo
600g salmon fillet
4dl white wine
Ardo parsley
sorrel
chervil
Ardo chives
100g butter

Allergens

Milk, Sulphite, Fish

Preparation

Divide salmon fillet into 4 equal portions.
Season with pepper and salt.
Steam for a few minutes.
Finish cooking romanesque vegetables.
Drain and season to taste with pepper and salt.
Bring white wine sauce to the boil.
Add herbs.
Pour the sauce into an electric blender and blend at high speed for 30 seconds.
Add the butter in small pieces.
Blend for another 10 seconds.
Place the vegetables in the centre of the plate.
Spoon the sauce around it.
Finish with the chopped tomatoes.
