400g Wild rice mix Ardo 300g Garden peas fine Ardo 250g of cherry tomatoes 150g of diced Feta cheese 1 small cucumber 50 ml of lemon juice 50 ml of olive oil 50g of raisins Pepper and salt Ardo mint

Preparation
Bring lightly salted water to the boil add the peas and cook for a couple of minutes. Drain the peas and allow to cool.
Divide the cucumber into 2 equal pieces, remove the seeds and slice
Mix the lemon juice and the olive oil and flavour with pepper and salt.
Stir this dressing into the rice, along with the peas, cucumber, chopped mint and raisins.
Let the salad rest for approximately 15 minutes. Garnish with halved cherry tomatoes and the diced Feta cheese.
