Rainbow carrots with ginger and maple syrup


Serve 10

1.5 kg Ardo Rainbow carrots
20 g Ardo Ginger cubes
50 g Ardo Shallot
10 g Ardo's chives
100 g butter or margarine
Maple syrup to taste
salt and pepper




  1. Steam the rainbow carrots briefly and allow them to drain for a while.
  2. Sauté the shallots and ginger in butter or margarine.
  3. Add the carrots and season with salt and pepper.
  4. Allow to stand for a short while and then add the maple syrup. Allow to caramelise slightly.
  5. Garnish with the chives.
