Rainbow carrots with ginger and maple syrup

Ingredients

1.5kg Rainbow carrot Ardo
20g Ginger diced Ardo
50g Shallots Ardo
10g Chives Ardo
100g butter or margarine
Maple syrup to taste
Pepper and salt

Preparation

  1. Briefly steam the rainbow carrots and let them drain.
  2. Stew shallots and ginger in the butter or margarine.
  3. Add the carrots and season with salt and pepper.
  4. Let it simmer for a while and finally add the maple syrup. Leave to caramelize slightly
  5. Finish with the chives.
