Quiche with leeks, pak choi and goat cheese


Serves 20:

2.5kg creamed leeks Ardo
1.5kg pak choi Ardo
20g chives Ardo
20 eggs
400g goat cheese (roll)
Pepper and salt
4 quiche bottoms (diameter 20-24 cm)

  1. Defrost the creamed leeks and mix with the eggs.
  2. Stir fry the pak choi in some butter and season with pepper and salt.
  3. Mix the pak choi and chives with the creamed leeks.
  4. Put the mixture into the quiche bottoms.
  5. Cut the goat cheese in smaller slices and put it on top of the quiche.
  6. Bake in the oven for 30’-35’ at 180°C. Cut into portions and serve hot.
  7. Serve with a salad.
