Penne with ratatouille à la Mexicana


Serves 20:

5kg precooked penne Ardo
5kg ratatouille vegetable mix Ardo
1kg Salsa Mexicana Ardo
1l tomato sauce
1l vegetable stock
1dl olive oil
Pepper and salt
300g mozzarella


Gluten, Milk, Celery


  1. Mix the ratatouille vegetable mix with the Salsa Mexicana and olive oil.
  2. Moisten with the vegetable stock and tomato sauce and simmer until cooked.
  3. If necessary: use some corn flour to thicken the sauce
  4. Heat the penne in the steamer.
  5. Serve with the hot ratatouille.
  6. Finish off with some cubes of mozzarella.

Suggestion: also delicious as oven dish (25-30 min. In the oven at 180°C)
