Oven dish with veggie minced meat, spinach and chicory

Serves 20:

2.5kg Spinach ‘Foglia’ Ardo
250g shallots Ardo
2kg chicory Ardo
2,5kg veggie minced meat
Olive oil
100g butter
pepper, salt and nutmeg
4kg potato puree
bread crumbs

Preparation

  1. Stir half of the shallots in the olive oil, add the veggie minced meat and season with pepper and salt.
  2. Stir the other half of the shallots in some butter, add the defrosted spinach Foglia and simmer for a while. Season with pepper.
  3. Stir (for a short time) the chicory and season with pepper, salt and nutmeg. Mix with the potato puree.
  4. In an oven dish create layers of veggie minced meat, then spinach and then a layer of chicory puree.
  5. Dust with the breadcrumbs and some butter. Bake at 180°C for 30-35 minutes.
