Organic tricolore pepper soup


Serves 10

1.5kg Organic Tricolore pepper mix Ardo
500g Organic Onions diced Ardo
20g Organic Garlic Ardo
3l organic vegetable broth
100g organic Parmesan cheese
organic olive oil
salt and pepper


Milk, Celery


  1. Stew the onions and garlic in some olive oil.
  2. Add the tricolore pepper strips and the vegetable broth and let it cook until the vegetables are tender. Keep some pepper strips on the side for the garnish.
  3. Blend into a smooth soup. Season with salt and pepper.
  4. Sprinkle the Parmesan on an oven plate with baking paper and bake golden brown at 180°C.
  5. Serve the soup with the crispy Parmesan.
  6. Tip: the soup can also be served cold.
