Organic sweet potato mash with wild boar


Serves 10

2kg Organic Sweet potatoes Ardo
1kg Organic Pumpkin diced (butternut) Ardo
1kg Organic Diced potatoes Ardo
250g Organic Onion diced Ardo
30g Organic Parsley Ardo
1.5kg wild boar roasts
500ml organic vegetable broth
500ml game jus (gravy)
50g organic butter
lettuce hearts
salt and pepper

  1. Stew the onions in some butter. Add the sweet potatoes, pumpkin and potatoes and let it stew. Add the vegetable broth and continue cooking under the lid.
  2. Puree and season with salt and pepper. Mix the parsley under the mash and add a knob of butter if necessary.
  3. Season the roasts with salt and pepper and sear all sides over a high heat. Then continue roasting (30 minutes per kilo) in a preheated oven at 180°C.
  4. Serve with the wild jus and a grilled lettuce heart.
