Organic sweet potato empanadas

Ingredients for 10 empanadas

500g Organic Sweet potatoes Ardo
100g Organic Corn supersweet Ardo
50g Organic Diced onions Ardo
10g Organic Diced garlic Ardo
15g Organic Parsley Ardo
1 sheet organic puffed pastry
1 organic egg
50ml organic olive oil
Peru spice mix
salt
pepper

Preparation

  1. Put the sweet potatoes on a baking tray, sprinkle with olive oil and season with coarse salt and pepper. Put in the oven for 10 minutes at 180°C.
  2. Stir the onions and garlic dices in some olive oil, add the corn and allow to simmer.
  3. Mix the sweet potatoes with the stewed vegetables in a kitchen robot.
  4. Add the parsley and season with the Peru spice mix, salt and pepper and add some extra olive oil if you want.
  5. Roll out the puff pastry and make 10 circles of 9-10cm diameter with a round cut-out mold.
  6. Put some sweet potato filling on each piece of puff pastry and close.
  7. Press the edge tightly with a fork and brush the empanadas with the beaten egg.
  8. Place the empanadas on a baking tray covered with baking paper and bake for about 8 to 10 minutes in the oven until golden brown.
