Organic gazpacho with sweet potato

400g Organic tomato dices Ardo
160g Organic Tricolore pepper mix Ardo
100g Organic Sweet potatoes Ardo
60g Organic Onions sliced Ardo
5g Organic Garlic Ardo
organic olive oil
1dl water
Sherry vinegar
salt
pepper

Preparation

  1. Defrost all the vegetables. Keep some tricolore pepper strips aside to finish the gazpacho.
  2. Mix the vegetables with the water in a blender. Season with salt, pepper and xeres vinegar.
  3. Put the gazpacho in a bowl and finish with some olive oil and some pieces of tricolore pepper.
