Miso soup with pak choi, spring onions and edamame beans


Serves 20:

1kg pak choi Ardo
100g spring onion Ardo
500g edamame beans Ardo
50g wakame Ardo
300g Miso paste
4l vegetable stock
800g Tofu


Soy, Celery


  1. Boil the vegetable stock.
  2. Add the vegetables and wakame and bring to boil again.
  3. Mix the miso paste in the soup. Do not bring to boil.
  4. Put in each bowl some spring onions and some tofu dices.
  5. Pour on top the hot miso soup.
