Mexican dirty sweet potato fries


Serves 10

- 2kg Ardo Sweet potato fries
- 1kg Ardo Roasted corn Mexicana
- 300g Ardo Avocado halves
- 50g Ardo Mix Salsa Mexicana
- 500g cheddar
- 50ml olive oil
- 300g sour cream
- 1 lime
- Pepper and salt





  1. Season the sour cream with pepper, salt and some lime zest.
  2. Defrost the avocado halves and crush them fine. Mix with olive oil, mix salsa Mexicana and the lime juice. Season with pepper and salt.
  3. Deep fry the sweet potato fries (3-4 min) and put them in a fireproof dish. Put the roasted corn Mexicana and the cheddar over the fries and bake for another 5-8 minutes in the oven at 180°C.
  4. Serve with the guacamole and the sour cream.
