Heat in a pan with a little olive oil. Add the persillade, ovendried tomatoes and olives and lightly sauté for around 2 minutes.
Next add the macaroni and cherry tomatoes and heat again for 4–6 minutes.
Finally, season everything with salt and pepper to taste, stir in the parsley and arrange neatly onto four plates.
Tip: Adding a handful of prawns to the pan at the beginning and grating some parmesan over the pasta at the end is a quick way to give the dish a tasty Mediterranean twist.
