Hummus of white cannellini beans with flambéed shrimps

Ingredients

500 g Ardo White cannellini beans
80 g Ardo Asian style herb mix
10 g Ardo Garlic cubes (optional)
30 scampi
50 ml olive oil
50 ml vegetable stock
30 g black sesame
Crackers
50 ml cognac
30 g butter
Lemon juice to taste
paprika powder
Salt and pepper

Preparation

  1. Briefly blanch the white cannelini beans in the vegetable stock with the garlic.
  2. Mix them with some cooking liquid, salt and pepper and a little paprika. Then season with lemon juice.
  3. Cook the Asian-style herb mix in the butter, add the scampi, leave to simmer for a while and flambé with the cognac.
  4. Season with salt and pepper and sprinkle with the black sesame.
  5. Serve the scampi with the hummus and crackers.
