Serves 4

4 Ardo half avocados
12-16 tiger prawns

For the marinade:

2 tbsp. Ardo shallots
1 tsp. Ardo coriander
10g Ardo ginger
30ml sesame oil
30ml soy sauce
30ml vegetable oil
2 tablespoons of roasted sesame seeds for garnish
Fresh herbs

  1. Grill the avocados directly over the heat while they are still frozen. Let them grill for approx. 10-15 minutes until they have nice grill marks. Cool them down in the refrigerator.
  2. Once cooled, cut the grilled avocados into chunks.
  3. Make a marinade with the sesame oil, vegetable oil, shallots, soy sauce, coriander and ginger.
  4. Pour the marinade over the avocado chunks.
  5. Serve with the grilled tiger prawns (grill 1-2 minutes on each side), fresh herbs and roasted sesame seeds as a starter or as tapas.
