Grill mix à la Siciliana gratin with pasta gobbetti and spinach ‘Foglia’

2kg Leaf spinach ‘Foglia’ Ardo
1.5kg Grill mix à la Siciliana Ardo
1kg Pasta Gobbetti Ardo
100g Onions diced Ardo
20g Basil Ardo
10g Garlic Ardo
500g grated mozzarella
5dl cream
olive oil
salt and pepper
rucola to garnish

Preparation

  1. Defrost the spinach ‘Foglia’ and squeeze out the excess liquid. Stew the onions and garlic in some olive oil. Add the spinach and simmer for a while. Add the cream and let it boil.
  2. Season with salt and pepper and spread into a buttered oven dish.
  3. Put the pasta gobbetti over the spinach.
  4. Add the mozzarella over the pasta and sprinkle with olive oil, basil and season with salt and pepper.
  5. Arrange the grill mix à la Siciliana on the mozzarella, drizzle with olive oil and season with salt and pepper.
  6. Bake in the oven for 30-45 mins at 180°C.
  7. Finish off with some rucola.
