1kg Ardo Green beans whole 100g Ardo Italian herb mix 2 egg yolks 1 tablespoon of mustard Juice of 1 lemon 10ml White balsamic vinegar 100ml Olive oil extra vierge 50g Greek yoghurt 100 ml Canola oil Black pepper Salt

Allow to boil an amount of water to blanch the green beans. Add a good pinch of salt. When boiling, add the green beans, bring to the boil and drain immediately. Cool down in ice water or cold water. Set aside in fridge.
Add 2 egg yolks in a bowl, with 1 tablespoon of mustard, 1 juice of lemon and the balsamic vinegar. Whisk step by step by adding small amount of both oils until you get a smooth mayonnaise style dressing. Season with pepper & salt, stir in the Greek yoghurt.
Add the Italian Herbs and allow to marinate the flavours in the dressing.
Add a good amount of dressing to the green beans to your own taste.
