Cream of onion soup with cognac


Serves 4

500g of Ardo pre-fried onion slivers,
400 cl of chicken stock,
15g of powdered veal stock,
10g of Ardo chopped garlic,
50 cl of pouring cream,
10g of Ardo chopped chives,
10cl of cognac,
salt and pepper


Milk, Celery


  1. Heat the pre-fried onion slivers while still frozen.
  2. When thawed, add the chopped garlic, powdered veal stock and mix together.
  3. Add the chicken stock, cream and salt.
  4. Bring to the boil.
  5. Lower the heat, add the cognac and pepper and simmer.
  6. Add the chives and serve with croutons.
