Cream of chestnuts with caramelized pineapple and mango and sorbet of green smoothie


Serves 4:

Cream of chestnuts:
100g Chestnuts Ardo
240g Mascarpone
100ml Whipped cream

Caramelized pineapple and mango:
120g Pineapple Ardo
120g Mango Ardo
150g Cane sugar
50g Butter

Green smoothie sorbet:
250g Green smoothie mix Ardo
100ml Glucose (water / sugar 1:1)


Milk, Egg


  1. Melt some butter and cook the chestnuts. Chop them into fine pieces.
  2. Mix the whipped cream and the mascarpone and distribute in small glasses. Put it in the fridge.
  3. Caramelize the pineapple and mango with the cane sugar in butter.
  4. Prepare the green smoothies according to the packaging instructions. Add the glucose and freeze into portions.
  5. Decorate on a plate and serve.
