Courgette duo with mascarpone and Italian herbs


Serve 10

1.5 kg Ardo Duo of courgettes
50 g Ardo Italian herb mix
200 g mascarpone
150 g red pesto
100 ml olive oil
salt and pepper




  1. Steam the courgettes briefly and allow them to drain.
  2. Mix the red pesto with the mascarpone and half of the Italian herb mix.
  3. Mix the rest of the Italian herb mix with the olive oil.
  4. Spread the mascapone mixture in a baking dish. Arrange the courgette slices on top.
  5. Season the courgette slices with salt and pepper and brush with the spicy oil.
  6. Bake in the oven for 20 minutes at 180°C.
