Pan fry the salmon:
Heat a large hot pan for the salmon filet with cooking oil, place the salmon filet with skinside down, add the saké (half covered) and cook for about 7-8 minutes.
Prepare the sauce:
Combine the other half of the saké with the miso paste, garlic, mirin, sugar & the Tobachan sauce. Mix well.
Pan fry the vegetables:
Cook the cabbage and the onion with the mushrooms. Stir fry for some minutes on high heat. Add the carrots and sliced peppers. Put the beansprouts in the mix at the end and let it simmer for a couple of minutes on high heat.
Finishing:
Put the vegetables around the salmon in a large plate.
Sprinkle the miso sauce the salmon and the vegetables.
Simmer for about 4-5 minutes with cover until the salmon is fully cooked. Add the butter at the end and allow to melt through the dish. Serve hot.
