Carrot cake with Duo of carrots Chef’s cut

1kg Duo of carrots – Chef’s cut Ardo
1kg Carrot puree porties Ardo
20g Chives Ardo
4dl cream
8 eggs
200g goat cheese
2 sheets shortcrust pastry
50g hazelnuts
thyme
salt and pepper

Preparation

  1. Preheat the oven to 180°C. Cover the bottom of the baking pan with baking paper and cover the pan with the shortcrust pastry.
  2. Steam the carrots briefly and rinse under running water.
  3. Defrost the carrot puree and mix with the eggs and cream. Add the chives and some thyme. Season with salt and pepper.
  4. Pour the mixture in the mould and arrange the carrots nicely. Season with salt and pepper and sprinkle with thyme. Cover with foil
  5. Bake in the oven for 30 minutes.
  6. Chop the hazelnuts.
  7. Remove the quiche from the oven and remove the foil. Sprinkle the crumbled goat cheese and hazelnuts. Bake for another 15 minutes.
  8. Bon appétit.
