Ardo Soba Noodle vegetable soup

- 100g Ardo sugar snap peas
- 100g Ardo Pak choi
- 100 Ardo Shii také
- 100g Ardo Beansprouts
- 100g Ardo Carrot strips
- 1 tbls Ardo Ginger chopped
- 1 tbls Ardo Red chili diced
- 2 tbls Ardo Spring onion
- 1 tbls Ardo coriander
- 600ml Miso soup
- 250g Soba noodles
- Salt & sugar
- Cooking oil

Preparation

  1. Boil the noodles in salted water for about 2-3 minutes. Drain off and refresh under cold water.
  2. Heat up a wok and add the cooking oil. Add the ginger and chili and stir fry for about 15-30 seconds. Pour the vegetable mix, season with salt and sugar and stir fry for 2-3 minutes.
  3. Put the noodles in a bowl, add the pan fried vegetables and pour on top the hot miso soup.
  4. Finish off with spring onion & coriander.
