Veggie tots gratin with sweet potato and roasted corn Mexicana

- 1kg Ardo Veggie tots
- 2kg Ardo Sweet potato mash
- 1kg Ardo Roasted corn Mexicana
- 50g Ardo Salsa Mexicana
- 250g cheddar
- Chimichurri herbs to taste

Preparation

  1. Put the roasted corn Mexicana in an oven dish.
  2. Heat the sweet potato mash and season with Salsa Mexicana.
  3. Place the sweet potato mash on top of the roasted corn Mexicana. Cover with the veggie tots.
  4. Put the oven dish in the oven (25 minutes at 180°C).
  5. Mix the cheddar with the chimicurri herbs and sprinkle on top of the veggie tots. Put under the grill for a cripsy crust.
