Stuffed potato with pak choi and shrimps

- 500g Ardo Pak choi
- 20g Ardo Chives
- 10 large, solid potatoes
- 500g grey shrimps
- 250g fresh cheese
- Butter
- Pepper
- Salt

Preparation

  1. Clean the potatoes. Bake them in the oven for about 60 minutes at 180°C.
  2. Hollow out the potatoes and keep the potato crumb.
  3. Stew the pak choi in some butter and season with salt and pepper.
  4. Puree the potato crumb and mix with 150g of fresh cheese, pak choi and chives. Season with salt and pepper.
  5. Fill the potatoes with the pak choi puree and cover with a knob of butter.
  6. Place the stuffed potatoes on a baking sheet with some baking paper. Place in the oven for 20 minutes at 180°C.
  7. Season the rest of the fresh cheese with chives, salt and pepper.
  8. Serve the stuffed potato with some shrimps and the flavoured fresh cheese.
