Heat butter in a pan, add the sweet chestnuts, sprinkle with caster sugar and fry, stirring frequently until well glazed.
Add 250g of sweet chestnuts to boiling water. Return to boil and simmer for 2-3 min. Drain and season to taste.
Place 250g of sweet chestnuts into a microwaveable container. Add 2 tablespoons of water and cover. Cook on full power for 3-4 min.
